Guilt Free Goodness + Life Update

Hello Everybody

Genuinely intimidated at the thought of writing one of these as it has been so long.

After the 40 Blog Posts in 40 Days challenge, I had to start being somewhat social again and gather a few more ideas to publish on this platform.

Over the past three weeks, I have been at home in Cork, in Dublin and getting back into routine this side of the pond.

Nothing better than being by the sea, looking at old photos and cooking, when I am at home home.
The Marker was insane…Xico was fun too!


Why are they though? Casual Common Rally of a Saturday 🙂

Three weeks later...feels way longer to be honest...thought I would start out with a recipe.

Vegan Gluten Free Dairy Free Allergen Free…Chocolate


I absolutely adore chocolate and I am also a firm believer in balance to avoid binge eating.

I genuinely eat chocolate most days…not even lying!

Being allergic to dairy used to be an issue however I have so much choice living here.

If you are feeling a little creative though, below is a delicious recipe to create your own.


Decadent Dairy Free Chocolate

This is laughably simple and takes no time at all.



  • 1 cup Raw Cacao Butter
  • 1/2 cup Raw Cacao Powder
  • 1/4 cup Maple Syrup
  • Sprinkle of Sea Salt


  • Flaked Almonds
  • Cacao Nibs
  • Goji Berries
  • Vanilla Extract
  • Hazelnuts
  • Raisins
  • Alcohol…for Rum and Raisin

To make this into milk chocolate, simply add Milk Powder into the mixture.


Honestly the method is too simple to call it a method…so I won’t insult you.


Boil a saucepan with water and place the cup of Cacao Butter above to melt.


I usually take the pot off the heat once the water is boiled as you’d just be wasting energy after that and sure the cacao butter has a very low melting point…so it does 🙂


Once melted, add the Maple Syrup and stir.


Add the Cacao Powder and the Sea Salt…and any other ingredients of your choosing.


Pour it into moulds to make little chocolates or for a little patterned effect…


Use a disposable tinfoil pie dish.


Once hardened like the above, break into shards or any shape that makes you happiest.


Over the next 5 weeks, I have plenty of weekends planned.
